Quince brandy is one of the most popular drinks in Serbia. Quince fruits are mostly processed into juices or jams, but quince-derived brandy is an extremely prized drink. Since quinces contain a small percentage of sugar, it is necessary to leave them on the tree for as long as possible until full maturity or even until slightly overripe. Picking is mostly done by hand, and it is desirable to remove the stalk. Washing is mandatory due to impurities and microorganisms.
Leskovac quince, which we use to produce our brandy, is the highest quality variety of quince in this area. It ripens in October and gives a round fruit weighing about 250g of a recognizable yellow color. It is recognizable by its bulge at the stalk of the fruit. It has a penetrating and strong pleasant smell. The flesh of the fruit is firm and juicy. Well, tolerates storage for several months. Quince Rakija from the Momirović distillery matures in oak barrels for at least a year, during which it acquires a ducat-yellow color and where the fragrant and aromatic components of the distillate are harmonized.
